Cass Titcombe, Canteen co-founder and Head Chef
Canteen's Head Chef cut his teeth in West Country restaurants before moving to London where he headed up the kitchens of Daphne's and The Collection there he learnt the skills needed to run a successful, award-winning kitchen. Later, Cass ran the kitchen at the Real Eating Company in Brighton, a much celebrated and revered exercise in quality British dining where he was able to apply his own ethos to a project. As a child he lived and grew up in Wales, his parents had a small-holding where they produced everything, grew vegetables and raised livestock. It is the belief of Cass, and his Canteen partners Dominic Lake and Patrick Clayton-Malone, in the potential of British cuisine, honestly prepared food and the importance of food provenance that drives the Canteen kitchen.
In 2009 Cass Titcombe became the first chef to take on a 'seasonal assignment' for British Airways. As part of the new culinary partnership Cass will create a dish for a single season over the coming year.
