Here Chef Benoit Sinthon delivers sublime local dishes such as pigeon eucalyptus, or the supremely delicate scarlet prawn with caviar. These dishes are expertly paired with wines from a distinguished cellar reflecting vintages from both Madeira and mainland Portugal. The restaurant’s popularity means that booking well in advance is essential.
